A Hidden Gem - Terra Vista
If you had asked me a year ago to name the best fine dining restaurant in Seattle with the highest caliber service, finest linens, quality steaks and a spectacular view, it would have been no question: Canlis. And while I’ll always love the Queen Anne classic, it’s wonderful to know that there is another outstanding option east of Lake Washington - meet Terra Vista.
Nestled in the Cascade mountain range, Terra Vista is just that – a beautiful view of pristine wilderness as far as the eye can see. The irony is that it is hidden behind Snoqualmie Casino (well inside, actually) and unless you know that Washington’s most stylish and well-appointed casino is there, you would miss Terra Vista altogether.
Once you enter the double doors, you are greeted by none other than Jon Sheard, the legendary maitre d' from the famed El Gaucho and Henry’s Off Broadway. Jon has masterfully trained the staff in classic European service that rivals any Michelin restaurant. Seated in a plush banquet or overstuffed chair, every seat has a spectacular view. Not to be forgotten is the wrap-around deck hugging the outside windows of the restaurant, setting a live backdrop for the perfect sunset dinner.
Behind the beautiful room and scenery is the real reason guests continue to return. Chef de Cuisine Bruce Dillon has been quietly creating magic in the kitchen for more than 15 years, three of which have been spent at Terra Vista. The plates are so beautifully prepared that it’s almost a crime to touch the plate with a fork and move his masterpiece. And bring your appetite; the fare is not petite, but rather awesome.
Summer welcomes an irresistible collection of entrees, making choosing nearly impossible. The Whole Broiled Maine Lobster (3 melt-in-your-mouth pounds of cracked Maine lobster), is served with tangy Gremolata mayonnaise, beech mushrooms, and potato puffs while Wild Caught King Salmon Steak delivers another savory option for seafood lovers with spinach cream, fennel pollen and a Leek and Farro Pilaf. A Best End of Local Lamb and Elk is prepared with preserved lemon chutney, potato pave, house made elk sausage, and flavorful rosemary and mint oil. For those who can’t pass up red meat, prepare for the ultimate steak in the Prime Cote de Boeuf Royale (please allow 45 minutes to cook). This mouth-watering 80 ounce bone-in “RR” Ranch rib steak comes with twice cooked fingerling truffle potatoes sauced with garlic béarnaise. Straying from red meat? Consider the Mad Hatcher Garlic Chicken, a half semi-boned natural chicken accompanied with leek bread pudding and confit garlic jus.
Be sure to save room for notoriously innovative desserts, especially the Pistachio Cake. An excellent compliment to any entrée, this nutty treat is topped with a savory lavender whip and sprinkled with orange dust for a flavorful combination. The zesty Orange Torte joins port reduction, honey foam, and macadamia nut tuile together in this sweet offering.
